Chocolate Kajmac Sauce

I never heard of Kajmac until one day, when we were shopping in a Polish shop and my son showed me a can of Kajmac sauce that he wanted to buy for his birthday cake. Reluctant and having no idea what it is as it didn’t have an English translation, I bought it as the chocolate cake from the can looked really good. All I knew was that it had over 50 grams of sugars per 100 grams! At that time, I was looking at carbs but I wasn’t really following a low carb lifestyle.

Anyway, I bought it back then and both of my kids loved it as it was very, very chocolatey and sweet! With all that sugar in it, no wonder it was a sugar bomb! Next time when my son wanted a chocolate cake with Kajmac sauce, I have done my research and made my own version of it without sugar and to my surprise, it had the same success as the canned one.

The one I bought had 292 calories per 100 grams, and my recipe only has 172 calories per 100 grams.

1. Add the double cream, the sweetener and the cocoa powder (or dark chocolate) in a double boiler (a saucepan placed in another saucepan with water).

2. Bring to boil in bain-marie (double boiler) and stir the mixture until it becomes creamy and the volume has reduced to about half of the original volume or the mixture becomes very thick. Once it gets a creamy, thicker consistency remove it from heat and add the butter and vanilla extract.

3. Stir until all ingredients are well combined and then pour the mixture into a bowl and cover it with cling film and let it to cool completely.

The mixture looks pretty much like chocolate pudding but it tastes different, it’s sweeter and very dense. It gets thicker and less pliable as it’s cools down, but when stirred it softens and can be spread easily over your favourite cakes.

The nutritional facts are based on the ingredients are used. I got a bit less than 300 grams of chocolate Kajmac and the breakdown below is for 100 grams of the mixture. When used to top cakes, it needs to be calculated again per slice. If all of this mixture is used to top a 12 slices cake, then this sauce will only add 43 calories to each slice.

Each slice will add 4 grams of fat, 1 grams carbs, 1 grams proteins, but best of all zero grams of sugar!
