Simply delicious chocolate Almond Butter Bites! A great start for a busy day. It has 3 grams of fibers and 8 grams of Carbs as it’s made with a banana and oats. However it’s a healthy snack for those who have a higher limit set for their intake of carbs. It’s a good snack to have before going to gym, for a run or even to work.

*MCT Oil (Medium-Chain Triglycerides) is believed to be metabolised more easily by the body than standard coconut oil. This is due to the removal of the long chain fatty acids and lauric acid. It is rapidly digested and absorbed, and are thought to provide a useful energy source.

Instructions

  1. Line a tray with parchment paper and set aside.
  2. In a small pan add the almond butter, mashed banana, 45 g Stevia Sweetener, MCT or Coconut oil, and vanilla extract.
  3. Over medium-high heat, stir the mix until smooth and fully combined.
  4. Once it starts boiling, remove it from the heat and add in the rolled oats, the Golden Milled Linseed and the almond flakes. Mix until they are well combined.
  5. Chop the chocolate squares in small pieces and drop them in the mixture. If the mixture is warm, they will melt and blended in. If the mixture has cooled off, then they will remain as chocolate chips. I prefer to melt them in.
  6. Heap one tablespoon with the mixture and drop them on the baking sheet.
  7. If desired, you can also roll them over in almond flakes.
  8. Place baking pan into the fridge and allow to cool until bites have set. They can be stored in an airtight container in the fridge for up to a week.
